Chocolate Quinoa Treats

Dreaming of your ski trip out West? Picture yourself relaxing on that United flight - and skip the Biscoff cookie and pretzels. Instead, say yes to the chocolate quinoa crisp: crunchy, salty, chocolatey, and surprisingly good for you. Better yet, you don’t have to wait for takeoff…make them at home now!



Ingredients

  • 2 cups puffed quinoa

  • 7 oz dark chocolate (200g)

  • ½ teaspoon sea salt


Preparation

  • Lightly toast the puffed quinoa to give it a bit more crunch by placing it in a dry frying pan over medium heat, stirring frequently for a few minutes until it is dried out and crispy. Do not walk away and do not let it burn!



  • Chop the chocolate and melt it using your preferred method. I place it in a glass bowl and microwave it; when it’s almost melted, stir until the remaining pieces melt smoothly.


  • Add the toasted quinoa into the bowl with the melted chocolate and add the sea salt. Blend together until completely coated. 



  • Using two small spoons, scoop small dollops of the mixture and place onto a baking sheet lined with parchment paper. Use the back of the spoon to press them down into flat disks. They won’t be perfect circles like on United, but that is a-ok. 



  • Place the baking sheet in the fridge and chill until set - about 30 minutes.

  • Enjoy and have a napkin handy!



Pro Tip: 


For sourcing, I ordered the quinoa from Amazon and bought a huge dark chocolate bar from Trader Joes.
