Mojitos are essentially adult limeade. It was a beautiful CA sunset and just felt like a Mojito kind of night. Muddled mint on the bottom of the glass releases so much flavor. There are versions with extra fruit, but there really is no need to over-complicate this drink. Also, this is a great time to point out that everyone should invest the time (which you have) to make a little batch of simple syrup and keep that in the fridge. See below.
Ingredients
2 sprigs of young, tender mint
1 oz. Simple Syrup
3/4 oz. fresh squeezed lime juice
1 1/2 oz. white rum
2 dashes of Angostura bitters (optional)
1 1/2 oz. club soda
Preparation
In the bottom of a highball glass, place mint leaves, simple syrup, and lime juice. Bruise the mint leaves with a muddler. Add the rum and the bitters and then top with the club soda (and not a hair over 1 1/2 oz.) Stir, add ice, garnish with another sprig of mint.
Simple Syrup
Ingredients
1 part water
1 part sugar
Preparation
Place water in a pot and bring to a boil. For sheltering purposes, I recommend 2 cups water, 1 cup sugar. Turn off the flame and add the sugar. Stir until dissolved. Let this cool completely and then transfer to a large mason jar (with a lid) and place in the fridge.
