Quiche Shoulder Season

A love letter to a college kid for Easter


Anyone can make quiche and this is the perfect time to make one! Even a college student with a dorm kitchen can make this. This is a Green Run Recipe, perhaps even easier than a breakfast burrito and more impressive. Below is the simplest version possible - with the college kid shortcuts in mind. You know who you are! Love you!




Ingredients

  • Pie Crust - Green Groom Run Version - get a pre-made Pillsbury Pie crust in an aluminum pan (they come in packs of two so maybe you make an extra for friends?)...

  • 1 cup half-and-half or milk

  • 4 eggs, slightly beaten

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 8 slices bacon, crisply cooked, crumbled (3/4 cup) - option for a cat track here - buy pre-cooked Oscar Meyer bacon and chop up into 1/4 inch pieces

  • 1 cup shredded Swiss or Cheddar cheese

  • 1/4 cup grated Parmesan cheese

  • 1 tablespoon chopped onion, if desired

Preparation

  • Heat oven to 350°F. Again, we are on a groomed green run - follow instructions on the pie crust package. Prick holes all around the bottom crust with a fork. Place the pie crust in the oven. Bake until the bottom crust is just beginning to brown, about 7-8 minutes. Remove from the oven and set aside. (Crust can still be warm when you pour in the filling.)






  • In medium bowl, mix half-and-half, eggs, salt and pepper; set aside.





  • Layer bacon, cheeses and onion in crust-lined plate. Pour egg mixture over top.




  • Bake 40 to 50 minutes or until knife inserted in center comes out clean. Let stand 5 minutes; cut and enjoy!
