Chia Seed Pudding - for breakfast or whenever!

This is a great breakfast choice that takes a couple of minutes to prep the night before. It is a healthy breakfast full of fiber and protein and good fat. Add whatever you like to it once it is ready. And you can save it in the fridge for up to a week.


1 serving




Ingredients:

2 tablespoons chia seeds

1/2 cup unsweetened almond milk

1 teaspoon honey

1/8 teaspoon vanilla extract

3 strawberries, sliced

5 unsalted almonds, chopped





Preparation:

In a small mixing bowl, combine chia seeds, almond milk, honey, vanilla extract. Stir everything together to combine and be sure to mix out lumps, then transfer to a small airtight container - a small mason jar is perfect. Refrigerate overnight and up to a week.

When you're ready to eat the pudding, add strawberries and almonds - or whatever fruit or seed you have.
